- 20 oz cheese tortellini
- 1 lb steak (sirloin or ribeye)
- Salt, to taste
- Black pepper, to taste
- Garlic powder, to taste
- Smoked paprika, to taste
- 2 tbsp olive oil
- 4 tbsp butter
- 5 cloves garlic, minced
- 1 cup heavy cream
- 3/4 cup whole milk
- 1 1/4 cups parmesan, shredded
- Parsley, chopped (optional)
- Red pepper flakes (optional)
- Cracked black pepper (optional garnish)
Instructions
- Cook the cheese tortellini according to package directions, then drain and set aside.
- Season the steak with salt, black pepper, garlic powder, and smoked paprika.
- Heat olive oil in a large skillet over medium-high heat until shimmering.
- Add the seasoned steak and sear for 4-5 minutes on each side for medium-rare.
- In the last minute of searing, add minced garlic to the skillet.
- Remove the steak from the skillet and let it rest for 5 minutes.
- Reduce the heat to medium and add butter to the same skillet, allowing it to melt.
- Stir in heavy cream and whole milk, mixing until warm.
- Gradually whisk in parmesan cheese until melted and smooth.
- Add the cooked tortellini to the skillet and toss to coat in the sauce.
- Slice the rested steak against the grain and place it over the tortellini.
- Garnish with parsley, red pepper flakes, and cracked black pepper if desired before serving.
Notes
For additional flavor, consider grilling the steak or experimenting with different garlic types.
