  • 1 lb steak (sirloin or ribeye)
  • Salt, to taste
  • Black pepper, to taste
  • Garlic powder, to taste
  • Smoked paprika, to taste
  • 2 tbsp olive oil
  • 4 tbsp butter
  • 5 cloves garlic, minced
  • 1 cup heavy cream
  • 3/4 cup whole milk
  • 1 1/4 cups parmesan, shredded
  • Parsley, chopped (optional)
  • Red pepper flakes (optional)
  • Cracked black pepper (optional garnish)

Instructions

  1. Cook the cheese tortellini according to package directions, then drain and set aside.
  2. Season the steak with salt, black pepper, garlic powder, and smoked paprika.
  3. Heat olive oil in a large skillet over medium-high heat until shimmering.
  4. Add the seasoned steak and sear for 4-5 minutes on each side for medium-rare.
  5. In the last minute of searing, add minced garlic to the skillet.
  6. Remove the steak from the skillet and let it rest for 5 minutes.
  7. Reduce the heat to medium and add butter to the same skillet, allowing it to melt.
  8. Stir in heavy cream and whole milk, mixing until warm.
  9. Gradually whisk in parmesan cheese until melted and smooth.
  10. Add the cooked tortellini to the skillet and toss to coat in the sauce.
  11. Slice the rested steak against the grain and place it over the tortellini.
  12. Garnish with parsley, red pepper flakes, and cracked black pepper if desired before serving.
