- 20 oz cheese tortellini (Fresh or refrigerated)
- 1 lb steak (sirloin or ribeye)
- Salt
- Black pepper
- Garlic powder
- Smoked paprika
- 2 tbsp olive oil
- 4 tbsp butter
- 5 cloves garlic, minced
- 1 cup heavy cream
- 3/4 cup whole milk
- 1 1/4 cups parmesan, shredded or freshly grated
- Parsley, chopped (optional)
- Red pepper flakes (optional)
- Cracked black pepper (optional garnish)
Instructions
- Season the steak generously with salt, black pepper, garlic powder, and smoked paprika.
- Heat the olive oil in a large pan over medium-high heat. Sear the steak for 3-4 minutes on each side, or until it reaches your desired doneness.
- Remove the steak from the pan and let it rest. Melt the butter in the same pan over medium heat.
- Add the minced garlic to the melted butter and sauté until fragrant, about 1 minute.
- Pour in the heavy cream and whole milk, stirring to combine and bringing it to a gentle simmer.
- Stir in the parmesan cheese until melted and smooth. Adjust seasoning with salt and black pepper.
- Cook the tortellini according to package instructions, drain, and toss it in the sauce.
- Slice the rested steak against the grain and place it over the tortellini. Garnish with chopped parsley, red pepper flakes, and cracked black pepper as desired.
Notes
For best results, let the steak rest before slicing, and adjust the sauce consistency by adding more milk or cream as desired.
