  • 1 lb steak (sirloin or ribeye), cut into bite-size pieces

  • Smoked paprika, to taste
  • 2 tablespoons olive oil
  • 4 tablespoons butter
  • 5 cloves garlic, minced
  • 1 cup heavy cream
  • ¾ cup whole milk
  • 1¼ cups Parmesan cheese, freshly grated
  • Chopped parsley
  • Red pepper flakes
  • Cracked black pepper

Instructions

  1. Bring a large pot of salted water to a boil. Cook the tortellini according to package directions (about 3–5 minutes). Drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Season the steak with salt, black pepper, garlic powder, and smoked paprika. Sear the steak for 3–5 minutes until browned, then remove from the skillet and set aside.
  3. Reduce heat to medium. Add butter to the same skillet. Once melted, add minced garlic and sauté for about 1 minute until fragrant.
  4. Pour in the heavy cream and whole milk. Stir well and let it simmer for 3–4 minutes until slightly thickened.
  5. Gradually stir in freshly grated Parmesan cheese until melted and smooth. Adjust seasoning as needed.
  6. Return the seared steak and cooked tortellini to the skillet. Toss gently for 2 minutes, ensuring everything is evenly coated in the sauce.
  7. Garnish with chopped parsley, cracked black pepper, and red pepper flakes if desired. Serve immediately.
