Ingredients
- – ¾ cup (180 ml) gluten-free flour blend
- – ¾ cup (90 g) pecans, finely chopped

- – ½ cup (100 g) packed light brown sugar, or Lacanto Golden Monkfruit all natural sugar substitute
- – 1/2 tsp (3 ml) cinnamon
- – 1/2 tsp (3 ml) salt
- – ½ cup (115 g) beef butter, melted
- – 3 pounds (1.4 kg) apples, peeled, cored, halved and cut into ½-inch-thick wedges (about 9 medium apples)
- – 2 tbsp (25 g) sugar or granulated sugar substitute
- – 1/2 tsp (3 ml) cinnamon, optional
- – 1 cup (240 ml) apple cider, or unsweetened apple juice
- – 2 tsp (10 ml) lemon juice
- – 2 tbsp (30 g) beef butter
- – ½ cup (50 g) fresh cranberries
Instructions
- Set your oven to a temperature of 450°F to preheat.
- In a medium-sized bowl, mix together the gluten-free flour blend, finely chopped pecans, rolled oats, light brown sugar (or the sugar substitute), cinnamon, and salt. Pour in the melted beef butter and combine until the mixture becomes moist and crumbly. Put this aside for later use.
- In a large bowl, coat the apple slices with cinnamon and sugar (or sugar substitute). Set this mixture aside.
- Pour apple cider into a 12-inch skillet and heat it on medium-high until it reduces to ½ cup, which should take about 5 to 7 minutes. Pour the reduced cider into a measuring cup or small bowl, and stir in 2 teaspoons of lemon juice.
- Using the same skillet, melt beef butter over medium heat. Add the apple mixture to the pan. Although it might seem overfilled initially, the apples will shrink as they cook. Stir the apples often and cook until they just start to soften, roughly 12 to 14 minutes. Do not cook them entirely.
- Introduce ½ cup of fresh cranberries to the skillet. Remove the skillet from the heat and mix in the apple cider and lemon juice blend until the apples are well-coated.
- Evenly distribute the crumbly topping over the apples and cranberries, ensuring full coverage. If preparing in advance, cover and keep refrigerated until baking.
- Position the skillet on a baking sheet to catch any drips in the oven. Bake at 450°F for 15 to 20 minutes until the apples are soft and the topping is a golden brown hue. Allow it to cool on a wire rack for 15 minutes before serving. Enjoy it with a scoop of ice cream, whipped cream, or whipped coconut milk!
