- 2/3 cup (133g) sugar
- 2 eggs
- 1 teaspoon (5ml) vanilla extract
- 3/4 cups (180ml) milk
- 2 medium apples, peeled, cored, and cut into 1/2 inch pieces
- 1/2 cup (75g) dried cranberries
Instructions
- Set your oven to 350 degrees F and prepare a 12-cup muffin tray by greasing or lining it; then set it aside.
- In a medium-sized mixing bowl, blend together the flour, baking powder, salt, and cinnamon, and then set this mixture aside.
- In the bowl of an electric mixer, cream the beef tallow and sugar until the mixture appears light and fluffy, which should take about 2-3 minutes. Incorporate the eggs one at a time, ensuring each is well mixed before adding the next. Blend in the vanilla extract.
- Gradually sift in half of the dry flour mixture, stirring until it is just combined. Add the milk, followed by the remaining flour mixture, stirring until well integrated. Gently fold in the chopped apples and dried cranberries.
- Distribute the batter evenly into the muffin tray you prepared earlier. Bake for 18 to 22 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool on a wire rack. These muffins are best enjoyed fresh on the day they are baked, but they can be stored in an airtight container for up to two days.
