  • 3 large eggs
  • 1 cup fresh cranberries (100g)
  • 1/4 cup granulated sugar (50g)
  • 1 tablespoon cornstarch (8g)
  • 1/2 cup fresh orange juice (120ml)
  • 1 tablespoon orange zest (6g)
  • 1 cup sour cream (240ml)
  • 1/4 cup powdered sugar (30g)
  • 1 teaspoon vanilla extract (5ml)
  • 1/4 cup fresh cranberries, for garnish (25g)
  • 1 tablespoon orange zest, for garnish (6g)

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. In a bowl, mix graham cracker crumbs, melted butter, and 1/4 cup granulated sugar.
  3. Press the crumb mixture into the bottom of a 9-inch springform pan.
  4. Bake the crust for 10 minutes, then let it cool.
  5. In a large bowl, beat the softened cream cheese until smooth.
  6. Add 1 cup granulated sugar and 1 teaspoon vanilla extract to the cream cheese.
  7. Beat in the eggs, one at a time, until fully combined.
  8. Pour the cream cheese mixture over the cooled crust.
  9. In a saucepan, combine 1 cup cranberries, 1/4 cup granulated sugar, and cornstarch.
  10. Add orange juice and 1 tablespoon orange zest to the saucepan.
  11. Cook over medium heat until the cranberries burst and the mixture thickens.
  12. Spoon the cranberry mixture over the cream cheese layer.
  13. Bake the cheesecake for 50-60 minutes, until the center is set.
  14. Turn off the oven and leave the cheesecake inside with the door ajar for 1 hour.
  15. In a bowl, mix sour cream, powdered sugar, and 1 teaspoon vanilla extract.
  16. Spread the sour cream mixture over the cooled cheesecake.
  17. Refrigerate the cheesecake for at least 4 hours, or overnight.
  18. Garnish with 1/4 cup fresh cranberries and 1 tablespoon orange zest before serving.
