  • 4 large eggs
  • ¼ cup (60 ml) orange juice, freshly squeezed
  • ½ cup (125g) dried cranberries, finely chopped*
  • 1 cup (120g) powdered sugar
  • 1 Tablespoon (15 ml) orange juice, freshly squeezed
  • 2 Tablespoons (30 ml) milk, plus more as needed
  • 1 Tablespoon (15 ml) orange zest, optional

Instructions

  1. Heat your oven to 350°F (180°C) and lightly coat a 9×5-inch (23×13 cm) loaf pan with oil or butter. Put it aside for now.
  2. Pass the flour through a sieve into a bowl, then add the pinch of salt and baking powder, mixing them together.
  3. In another bowl, combine the sugar with the orange zest by rubbing them together until the aroma is released. Gradually mix in the melted vegetable oil, following with the eggs, integrating each one before adding the next. Pour in the freshly squeezed orange juice and stir just until the mixture is smooth and uniform, being careful not to over-stir.
  4. Gradually incorporate the dry ingredients into the wet mixture in two parts, making sure to mix well after each addition.
  5. Add the finely chopped cranberries, ensuring they are evenly distributed throughout the batter.
  6. Transfer the batter into the loaf pan you prepared earlier. Bake for approximately 45-50 minutes, or until a toothpick inserted into the center comes out clean. Move the cake to a wire rack to let it cool down completely.
  7. To make the glaze, combine all the ingredients (except for the orange zest) by whisking them together, adding more milk if necessary to achieve a drizzling consistency. Place a tray underneath the cooling rack to catch any excess glaze, then slowly pour the glaze over the top of the cake, letting it flow down the sides. Sprinkle orange zest over the glaze. Allow it to cool completely, then cut into slices and enjoy.
