- 1 cup dried cranberries (130 g)
- 1/2 cup powdered sugar (60 g)
- 2 tablespoons freshly squeezed orange juice (30 ml)
Instructions
- Preheat the oven to 350°F (175°C).
- Line a 9×9-inch baking pan with parchment paper.
- In a large bowl, whisk together the flour, granulated sugar, and salt.
- Add the softened butter to the flour mixture.
- Use a pastry cutter or your hands to combine until the mixture resembles coarse crumbs.
- Stir in the vanilla extract and orange zest.
- Fold in the dried cranberries until evenly distributed.
- Press the mixture firmly into the prepared baking pan.
- Bake for 25-30 minutes, or until the edges are lightly golden.
- Remove from the oven and let cool completely in the pan.
- In a small bowl, mix the powdered sugar with the orange juice until smooth.
- Drizzle the orange glaze over the cooled shortbread.
- Allow the glaze to set before cutting into bars.
- Once set, cut into squares or bars and serve.
