Instructions
- Preheat the oven to 350°F (175°C).
- Line two baking sheets with parchment paper.
- In a large bowl, beat the softened butter until creamy.
- Add granulated sugar and light brown sugar to the butter.
- Beat until the mixture is light and fluffy.
- Add eggs one at a time, beating well after each addition.
- Stir in vanilla extract until combined.
- In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the dried cranberries, pistachios, and white chocolate chips.
- Use a tablespoon to scoop dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake in the preheated oven for 10-12 minutes or until edges are lightly golden.
- Remove cookies from the oven and let them cool on the pan for 5 minutes.
- Transfer cookies to a wire rack to cool completely.
