  • 1/8 teaspoon (1 ml) ground cinnamon
  • 1/2 cup (75 g) dried cranberries
  • 6 ounces (170 g) white baking chocolate, coarsely chopped
  • FROSTING:
  • 1 package (8 ounces (227 g)) cream cheese, softened
  • 1 cup (120 g) powdered sugar
  • 1 tablespoon (15 ml) grated orange zest, optional
  • 6 ounces (170 g) white baking chocolate, melted
  • 1/2 cup (75 g) dried cranberries, chopped

Instructions

  1. Set your oven to 350°F. Use a large, microwave-safe bowl to melt the butter and mix in the brown sugar. Let it cool down a bit.
  2. Add the eggs one by one, making sure to mix thoroughly after adding each. Blend in the vanilla extract. In a separate bowl, combine the flour, baking powder, salt, and cinnamon, and then incorporate this mixture into the butter concoction. Fold in the cranberries and chopped white chocolate; the mixture will be dense. Evenly spread the batter into a greased 13×9-inch pan.
  3. Cook until the top turns golden and a toothpick inserted in the middle comes out with no wet batter, around 18-21 minutes. Allow it to cool entirely on a wire rack.
  4. For the frosting, whip together cream cheese, powdered sugar, and, if you like, orange zest until it’s smooth. Slowly blend in half of the melted white chocolate, then spread this over the cooled blondies. Sprinkle the chopped cranberries on top and drizzle with the remaining melted chocolate. If you want, add more orange zest as a garnish.
  5. Slice into triangle shapes. Keep them in an airtight container in the fridge.
