  • 2 large eggs divided (1 for the dough and 1 for the egg wash)
  • 2 tbsp (30 ml) sugar
  • 1 tsp (5 ml) vanilla extract
  • 1 cup (140 g) fresh cranberries
  • 1/2 cup (85 g) white chocolate chips
  • 1 tbsp (15 ml) water
  • 1 cup (120 g) icing sugar
  • 2 tbsp (30 ml) milk

Instructions

  1. Set your oven to 400°F (200°C) to preheat. In a large mixing bowl, combine the flour, baking powder, and salt using a whisk. Incorporate the frozen, grated beef suet by mixing with your hands until the mixture forms a crumbly texture, being careful not to overmix. Add the cranberries and white chocolate chips to the mixture.
  2. In a separate medium-sized bowl, whisk the buttermilk, sugar, one egg, and vanilla extract until well blended. Pour this liquid mixture into the bowl with the dry ingredients and stir until everything is just combined.
  3. Place the dough onto a silicone baking mat or parchment paper. With floured hands, shape the dough into a circle about 8 inches in diameter, as it will be sticky. Use a bench scraper or a knife coated with oil to cut the circle into 8 triangular pieces. Slightly separate the triangles and brush the tops with an egg wash made by mixing the second egg with a tablespoon of water.
  4. Move the baking mat or parchment paper onto a baking sheet and bake the scones for 22 to 24 minutes, or until they turn golden brown. Once baked, take them out of the oven and let them cool for a few minutes.
  5. As the scones cool, prepare the glaze by stirring together the icing sugar and milk in a small bowl until smooth. Drizzle the glaze over the cooled scones before serving.
