Ingredients

  • 8 oz penne or rotini pasta
  • 3 cups broccoli florets
  • 2 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil or butter
  • Salt and pepper to taste

Instructions

  1. Heat olive oil or butter in a large pot over medium heat.
  2. Sauté the minced garlic for 1-2 minutes until fragrant.
  3. Add pasta and broth to the pot, bring to a boil, then reduce to a simmer.
  4. Stir in the broccoli florets halfway through the pasta’s cooking time.
  5. Once the pasta is tender, mix in the heavy cream and Parmesan cheese.
  6. Season with salt and pepper to taste and serve warm.
