- 1/2 Onion, chopped
- 1 package Taco Seasoning
- 6 Large Flour Tortillas
- 1 can Refried Beans
- 2–3 cups Shredded Taco Cheese or Cheddar Cheese
- 1 can Cream of Mushroom Soup
- 4 ounces Sour Cream
Instructions
- Preheat your oven to 350°F.
- In a skillet over medium heat, brown the ground beef for 5-7 minutes, breaking it apart as it cooks.
- Add the chopped onion, cooking until it softens.
- Sprinkle in the taco seasoning, stirring until everything is well-coated.
- In a separate bowl, mix the cream of mushroom soup with the sour cream and set it aside.
- Spread refried beans evenly on the bottom of a baking dish.
- Layer three flour tortillas over the beans, followed by the ground beef mixture.
- Pour the creamy soup mixture over the beef, ensuring even coverage.
- Sprinkle a generous layer of shredded cheese on top.
- Add the remaining three tortillas, followed by the last of the beef mixture and more cheese.
- Bake for about 25-30 minutes, or until the cheese is bubbly and golden.
Notes
For a spicier kick, add diced jalapeños or crushed red pepper to the beef mixture. For a meatless version, substitute the beef with black beans and lentils.
