- 2 boneless, skinless chicken breasts, sliced or cubed
- 1 tablespoon Cajun seasoning blend
- 8 ounces fettuccine or your preferred pasta
- 1 cup heavy cream or half-and-half
- 1 cup freshly grated Parmesan cheese
Instructions
- Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain the pasta and set aside, reserving a small amount of the cooking liquid.
- In a large skillet, heat a drizzle of olive oil over medium-high heat. Add the chicken and sprinkle with Cajun seasoning. Cook until fully cooked through, about 6-8 minutes.
- Reduce heat to medium-low and pour in the heavy cream. Whisk in the Parmesan cheese until the sauce is smooth. Simmer until thickened to your desired consistency.
- Add the cooked pasta to the sauce and toss until evenly coated. If the sauce is too thick, add a splash of reserved pasta cooking liquid.
Notes
For added flavor, you can sauté vegetables like bell peppers or spinach with the chicken. Freshly grated Parmesan yields the best results.
