  • 2 boneless, skinless chicken breasts, sliced or cubed
  • 1 tablespoon Cajun seasoning blend
  • 8 ounces fettuccine or your preferred pasta
  • 1 cup heavy cream or half-and-half
  • 1 cup freshly grated Parmesan cheese

Instructions

  1. Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain the pasta and set aside, reserving a small amount of the cooking liquid.
  2. In a large skillet, heat a drizzle of olive oil over medium-high heat. Add the chicken and sprinkle with Cajun seasoning. Cook until fully cooked through, about 6-8 minutes.
  3. Reduce heat to medium-low and pour in the heavy cream. Whisk in the Parmesan cheese until the sauce is smooth. Simmer until thickened to your desired consistency.
  4. Add the cooked pasta to the sauce and toss until evenly coated. If the sauce is too thick, add a splash of reserved pasta cooking liquid.

Notes
