Instructions
- In a large pot, heat olive oil over medium heat.
- Add the chopped onion and minced garlic, sautéing until softened.
- Stir in the diced carrots and celery, allowing them to soften.
- Pour in the chicken broth and bring the mixture to a boil.
- Once boiling, add the egg noodles and cook according to package instructions.
- After the noodles are cooked, stir in the shredded chicken, heavy cream, dried thyme, parsley, salt, and pepper.
- Let the soup simmer for 10-15 minutes until everything is heated through.

Notes
