- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 3 cloves fresh garlic, minced
- 1 medium yellow onion, finely chopped
- 1 can (14.5 oz) diced tomatoes with green chilies
- 4 cups low-sodium chicken broth
- 1 cup heavy cream (or half-and-half)
- 2 tsp ground cumin
- 2 tsp chili powder
- Tortilla chips (for topping)
- Fresh cilantro (for garnish)
- Juice of 1 lime
Instructions
- Season the chicken breasts with salt and pepper. Chop the onion and mince the garlic.
- Heat a large pot over medium heat and add oil. Sauté the onions for about 5 minutes until they become translucent. Stir in the minced garlic and let it cook for another minute.
- Add the seasoned chicken breasts to the pot, lightly browning them on both sides.
- Pour in the diced tomatoes and chicken broth. Bring the mixture to a gentle boil.
- Allow the soup to simmer for about 20 minutes until the chicken is cooked through. Stir in the heavy cream.
- Serve hot, topped with tortilla chips, cilantro, and a squeeze of lime juice.
Notes
For extra texture, consider adding radishes or avocado as toppings. This soup stores well in the refrigerator and tastes even better the next day.
