- 14 ounces rigatoni
- 1 tablespoon unsalted butter
- 11 ounces spicy chorizo sausage
- 6 garlic cloves (minced)
- 4 tablespoons tomato paste
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ½ teaspoon black pepper
- ¾ cup heavy cream
- ½ cup grated Parmesan
- 2 tablespoons chopped parsley (optional)
Instructions
- Boil the rigatoni in salted water until al dente. Drain while saving one cup of cooking water.
- In a large skillet, heat the butter over medium heat, then add chorizo and cook until crispy.
- Add minced garlic and sauté until golden.
- Stir in tomato paste and cook for three minutes.
- Add oregano, salt, and pepper to season the sauce.
- Pour in heavy cream and bring to a boil, then reduce heat and stir in Parmesan until melted.
- Add the rigatoni and toss with sauce, using reserved cooking water to adjust consistency.
- Finish with chopped parsley and serve.
Notes
For a richer sauce, feel free to adjust the cream and Parmesan amount. Consider adding sautéed veggies or substitute chorizo with chicken sausage for variations.
