Ingredients

  • 1 tablespoon unsalted butter
  • 11 ounces spicy chorizo sausage
  • 6 garlic cloves (minced)
  • 4 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¾ cup heavy cream
  • ½ cup grated Parmesan
  • 2 tablespoons chopped parsley (optional)

Instructions

  1. Boil the rigatoni in salted water until al dente. Drain while saving one cup of cooking water.
  2. In a large skillet, heat the butter over medium heat, then add chorizo and cook until crispy.
  3. Add minced garlic and sauté until golden.
  4. Stir in tomato paste and cook for three minutes.
  5. Add oregano, salt, and pepper to season the sauce.
  6. Pour in heavy cream and bring to a boil, then reduce heat and stir in Parmesan until melted.
  7. Add the rigatoni and toss with sauce, using reserved cooking water to adjust consistency.
  8. Finish with chopped parsley and serve.

Notes

For a richer sauce, feel free to adjust the cream and Parmesan amount. Consider adding sautéed veggies or substitute chorizo with chicken sausage for variations.
