- 1 (10-ounce) can diced tomatoes with green chilies
- 1 cup diced potatoes (peeled or unpeeled)
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- ½ teaspoon ground cumin
- Salt and black pepper, to taste
- 1 cup heavy cream or half-and-half
- 1 cup shredded cheddar cheese
- Sliced green onions
- Extra shredded cheese
- Crushed tortilla chips
Instructions
- Start by heating a large pot over medium heat. Add the ground beef and cook until it browns evenly.
- Once the beef browns, add the diced onion and minced garlic to the pot and sauté for about 3-4 minutes.
- Gradually stir in the beef broth to deglaze the pot, then incorporate the diced tomatoes, corn, black beans, and diced potatoes.
- Bring the soup to a gentle boil, then reduce the heat to a simmer, cooking uncovered for 15-20 minutes.
- Stir in the heavy cream or half-and-half, along with the shredded cheddar cheese.
- Season your soup with salt, black pepper, smoked paprika, chili powder, and ground cumin. Serve warm, garnished with sliced green onions, more shredded cheese, and crushed tortilla chips.
