  • 1 (15-ounce) can whole kernel corn, drained
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (10-ounce) can diced tomatoes with green chilies
  • 1 cup diced potatoes (peeled or unpeeled)
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • Salt and black pepper, to taste
  • 1 cup heavy cream or half-and-half
  • 1 cup shredded cheddar cheese
  • Sliced green onions
  • Extra shredded cheese
  • Crushed tortilla chips

Instructions

  1. In a large pot over medium heat, brown the ground beef. Break it apart with a spoon, cooking until fully browned. Drain excess fat if needed.
  2. Add the diced onion and minced garlic to the beef. Sauté until the onion turns translucent and fragrant.
  3. Pour in the beef broth, adding the diced tomatoes, corn, black beans, diced tomatoes with green chilies, and diced potatoes. Season with smoked paprika, chili powder, cumin, salt, and black pepper.
  4. Allow the mixture to come to a gentle boil. Reduce the heat and let it simmer for about 20-30 minutes, allowing the flavors to meld and the potatoes to soften.
  5. Stir in the heavy cream or half-and-half, mixing well. Add the shredded cheddar cheese and stir until melted and combined.
  6. Ladle the soup into bowls, garnishing with sliced green onions, extra cheese, and crushed tortilla chips for added texture.

Notes

For a thicker soup, add more diced potatoes or slightly mash some during cooking. Adjust seasoning towards the end for best results.
