- 1 small diced onion

- 4 cups beef broth

- 1 can black beans, rinsed

- 1 tsp ground cumin
- 1 cup heavy cream or half-and-half

Instructions
- In a large pot, cook the ground beef over medium heat until browned; drain excess fat.
- Sauté onions and garlic in the rendered fat until softened.
- Add the cooked beef back into the pot along with the beef broth, diced tomatoes, corn, black beans, diced potatoes, and spices.
- Bring to a gentle simmer, allowing to cook for at least 20 minutes for flavors to meld.
- Adjust seasonings to taste, adding cayenne or hot sauce if desired.
- Serve hot, topped with heavy cream, shredded cheese, and crushed tortilla chips if desired.
