Ingredients

  • 1 small diced onion
  • 2 minced garlic cloves
  • 4 cups beef broth

  • 1 can black beans, rinsed
  • 2 diced potatoes
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1 cup heavy cream or half-and-half
  • Shredded cheddar cheese for garnish

Instructions

  1. In a large pot, cook the ground beef over medium heat until browned; drain excess fat.
  2. Sauté onions and garlic in the rendered fat until softened.
  3. Add the cooked beef back into the pot along with the beef broth, diced tomatoes, corn, black beans, diced potatoes, and spices.
  4. Bring to a gentle simmer, allowing to cook for at least 20 minutes for flavors to meld.
  5. Adjust seasonings to taste, adding cayenne or hot sauce if desired.
  6. Serve hot, topped with heavy cream, shredded cheese, and crushed tortilla chips if desired.
