Ingredients

  • 2 pounds of chicken breasts
  • 1 cup of heavy cream
  • 1 cup of chicken broth
  • 1 cup of sun-dried tomatoes, chopped
  • 1 cup of fresh spinach
  • 1 teaspoon of Italian seasoning
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. Place the chicken breasts at the bottom of the slow cooker.
  2. In a bowl, mix together the heavy cream, chicken broth, sun-dried tomatoes, Italian seasoning, salt, and pepper.
  3. Pour the mixture over the chicken in the slow cooker.
  4. Cover and cook on low for 6-8 hours, or high for 3-4 hours, until the chicken is cooked through.
  5. In the last 30 minutes of cooking, add the fresh spinach to the slow cooker.
