Ingredients

- 1.5 pounds of top sirloin steak (or your preferred cut)
- 2 to 3 tablespoons of neutral oil
- Southwest-style seasoning
- 1 cup of canned yellow corn (strained and rinsed)
- 1 cup of black beans (strained and rinsed)
- 1/2 of a large red onion (finely diced)
- 1 jalapeño (finely diced, with or without seeds)
- 1/2 cup of finely diced tomatoes
- 1/2 cup of chopped cilantro
- 2 tablespoons of minced garlic
- Juice of 1 lime (freshly squeezed)
- Salt (to taste)
- 1/3 cup of light sour cream
- 2/3 cup of Greek yogurt
- 3 tablespoons of Tabasco Chipotle pepper sauce
- 1.5 tablespoons of Chamoy sauce
- 1.5 tablespoons of honey
- 1 teaspoon of garlic powder
- Cooked jasmine rice (or your preferred bed of rice)
- Avocado slices
- Additional chopped cilantro for garnish
Instructions
- In a medium bowl, combine all salsa ingredients along with salt. Mix thoroughly and set aside in the fridge until ready to assemble.
- In another small bowl, combine the ingredients of the sweet & creamy chipotle sauce. Adjust the seasoning to your liking and refrigerate.
- Cut the steak into cubes and toss them with neutral oil and the Southwest-style seasoning.
- Heat a greased skillet over medium-high heat. Cook the steak cubes for 6 to 8 minutes, stirring occasionally, until you reach your preferred doneness.
- Assemble by starting with a generous bed of cooked jasmine rice in each bowl. Layer on your salsa and cooked steak abundantly.
- Finish by drizzling the creamy sauce over the top, adding avocado slices, and garnishing with chopped cilantro.
Notes
Adjust the jalapeño seeds based on your heat preference and consider marinating the steak for a few hours for enhanced flavor.
