- 4 chicken thighs, bone-in and skin-on
- Salt and pepper to taste
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Pat the chicken thighs dry with paper towels and season both sides with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Place the chicken thighs skin-side down and sear for 5-7 minutes until golden brown.
- Remove the chicken from the skillet and set aside.
- Add the minced garlic to the same skillet and sauté for about 1 minute until fragrant.
- Pour in the heavy cream, bringing it to a gentle simmer.
- Stir in the grated Parmesan cheese and Italian seasoning, mixing until the cheese melts and the sauce is smooth.
- Return the chicken thighs to the skillet, skin-side up, and spoon some sauce over each piece.
- Cover and let simmer for 15-20 minutes until the internal temperature reaches 165°F (75°C).
- Remove from heat, and sprinkle with chopped parsley before serving.
Notes
For variations, substitute heavy cream with half-and-half or try different cheeses. Squeeze fresh lemon juice for a brighter sauce.
