Instructions
- In a large pot, heat the chicken broth over medium heat.
- Add the shredded chicken, chopped vegetables, minced garlic, and onion powder. Cook until the vegetables are tender, about 5-7 minutes.
- Reduce heat to low and add the cream cheese, stirring until melted and well combined.
- Pour in the heavy cream and stir until the soup is creamy.
- Season with salt, pepper, and optional herbs. Simmer for another 10 minutes before serving warm.
Notes
Allow cream cheese to soften at room temperature for easier mixing. If using frozen vegetables, thaw them completely before adding to the soup.
