- 2 cups leftover ham, diced
- 4 cups potatoes, peeled and cubed
- 1 cup onion, chopped
- 2 cups cheddar cheese, shredded
- 1 cup sour cream
- 1 cup milk
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup bread crumbs
- 2 tablespoons butter, melted
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the diced ham, cubed potatoes, chopped onion, cheddar cheese, sour cream, milk, garlic powder, salt, and pepper.
- Pour the mixture into a greased 9×13 inch baking dish.
- In a small bowl, combine the bread crumbs and melted butter. Sprinkle the breadcrumb mixture over the casserole.
- Bake in the preheated oven for 45-50 minutes, or until the potatoes are tender and the top is golden brown.
- Let it cool for a few minutes before serving.
Notes
For extra flavor, consider browning the onions before mixing them in. You can also customize the creaminess by adjusting the sour cream and milk ratios.
