Ingredients

Scale
  • 2 cups leftover ham, diced
  • 4 cups potatoes, peeled and cubed
  • 1 cup onion, chopped
  • 2 cups cheddar cheese, shredded
  • 1 cup sour cream
  • 1 cup milk
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup bread crumbs
  • 2 tablespoons butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the diced ham, cubed potatoes, chopped onion, cheddar cheese, sour cream, milk, garlic powder, salt, and pepper.
  3. Pour the mixture into a greased 9×13 inch baking dish.
  4. In a small bowl, combine the bread crumbs and melted butter. Sprinkle the breadcrumb mixture over the casserole.
  5. Bake in the preheated oven for 45-50 minutes, or until the potatoes are tender and the top is golden brown.
  6. Let it cool for a few minutes before serving.

Notes

For extra flavor, consider browning the onions before mixing them in. You can also customize the creaminess by adjusting the sour cream and milk ratios.
