Ingredients

- 4 large potatoes, peeled and diced
- 1/2 cup of butter
- 1 onion, chopped
- 4 cups of chicken or vegetable broth
- 1 cup of heavy cream
- 1 1/2 cups of shredded cheddar cheese
- 1 cup of cooked bacon, crumbled
- 1/4 cup of chives, chopped
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until translucent.
- Add the diced potatoes and broth to the pot. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15-20 minutes.
- Use a potato masher or immersion blender to blend the soup to your desired consistency.
- Stir in the heavy cream, cheddar cheese, and crumbled bacon. Cook until the cheese is melted and the soup is heated through.
- Season with salt and pepper to taste.
- Serve hot, garnished with additional bacon and chives if desired.
Notes
For a thicker soup, add more potatoes. For a thinner consistency, add extra broth or cream as needed.
