Description

A warm and comforting creamy loaded baked potato soup topped with cheese, bacon, and chives, perfect for chilly evenings.


Ingredients

  • 4 large potatoes, peeled and diced
  • 1/2 cup of butter
  • 1 onion, chopped
  • 4 cups of chicken or vegetable broth
  • 1 cup of heavy cream
  • 1 1/2 cups of shredded cheddar cheese
  • 1 cup of cooked bacon, crumbled
  • 1/4 cup of chives, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the diced potatoes and broth to the pot. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15-20 minutes.
  3. Use a potato masher or immersion blender to blend the soup to your desired consistency.
  4. Stir in the heavy cream, cheddar cheese, and crumbled bacon. Cook until the cheese is melted and the soup is heated through.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with additional bacon and chives if desired.

Notes

For a thicker soup, add more potatoes. For a thinner consistency, add extra broth or cream as needed.
