- 1/4 cup brandy or sherry
- 1 bay leaf

- Stir in tomato paste and cook for 2 minutes.
- Add brandy or sherry and simmer until reduced by half.
- Pour in seafood stock, add bay leaf and thyme, and bring to a simmer for 20 minutes.
- Remove bay leaf and blend the soup until smooth using an immersion blender or regular blender.
- Return the soup to the pot, add heavy cream, and gently warm through without boiling.
- Fold in the lobster and crab meat and heat for 2-3 minutes until warmed through.
- Season with salt and pepper to taste.
- Serve in warm bowls garnished with parsley and additional seafood if desired.
Notes
- For best results, use fresh lobster and crab meat if available.
- You can substitute shrimp for either the lobster or crab if needed.
- If you don’t have seafood stock, you can use fish stock or even chicken stock in a pinch.
- The bisque can be made a day ahead (without the seafood) and refrigerated. Add the seafood when reheating.
