- 2 cups cooked chicken, shredded
- 1 cup cauliflower rice
- 1 cup cream cheese, softened
- 1 cup shredded cheddar cheese
- 1 cup chicken broth
- 1 cup broccoli florets
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat oven to 350°F (175°C).
- In a large mixing bowl, combine the softened cream cheese, chicken broth, garlic powder, onion powder, salt, and pepper until smooth.
- Add the shredded chicken, cauliflower rice, and broccoli florets, stirring gently to coat.
- Drizzle olive oil into a baking dish. Pour the chicken mixture into the prepared dish and spread evenly.
- Sprinkle remaining cheddar cheese over the casserole.
- Bake for 30-35 minutes until bubbly and golden on top. Allow to cool slightly before serving.
Notes
