- 12 ounces chicken and apple sausage
- 4 cups cubed butternut squash
- 3 cups chicken broth
- 3–4 cups baby spinach
- 1 cup uncooked basmati rice
- 1 sweet onion, diced
- 2–4 cloves of garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Start by thinly slicing the chicken sausage.
- Add the sausage into a large pan with olive oil.
- Sauté on medium heat until golden brown on both sides.
- Remove the cooked sausage from the pan and set it aside.
- Add more olive oil along with cubed butternut squash, diced onion, minced garlic, salt, and black pepper.
- Cover the pan and stir every few minutes until the butternut squash is tender.
- Once tender, add chicken broth and use an immersion blender to create a creamy sauce.
- Add uncooked rice and chicken sausage into the sauce, stirring well.
- Cover the pan and let it simmer on low until everything is cooked through.
- Finish by folding in the baby spinach and serve hot.
Notes
For extra creaminess, consider adding a splash of coconut milk or a dollop of sour cream at the end.
