A comforting and creamy ham and potato soup, perfect for using up leftover ham and warming up on chilly nights.
Ingredients

- 2 cups leftover ham, diced
- 4 cups potatoes, peeled and diced
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 onion, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add onion, carrots, and celery; sauté until softened.
- Stir in the diced ham and potatoes, and cook for a few minutes.
- Pour in the chicken broth and add thyme; bring to a boil.
- Reduce heat and simmer until potatoes are tender.
- Stir in the heavy cream, and season with salt and pepper.
- Serve hot.
Notes
For a heartier soup, add additional vegetables like peas or corn. Adjust the consistency by adding more broth or mashing some potatoes.
