- 1 cup ditalini pasta

- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 can diced tomatoes
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot over medium heat, brown the Italian sausage for about 6-8 minutes, breaking it into smaller pieces.
- Add the chopped onion and minced garlic; sauté for 2-3 minutes until the onion becomes translucent.
- Pour in the chicken broth and add the diced tomatoes; stir and bring to a gentle simmer.
- Add the ditalini pasta and cook until al dente, about 8-10 minutes.
- Lower the heat and stir in the heavy cream and grated Parmesan until melted and combined.
- Season with salt and pepper to taste, then serve hot garnished with fresh parsley.
Notes
This soup can be easily doubled for larger gatherings. Leftovers can be refrigerated for up to three days or frozen for longer storage.
