Tender chicken breasts enveloped in a rich, creamy basil pesto sauce, topped with melty mozzarella cheese, perfect for family gatherings.


Ingredients

  • 34 small boneless skinless chicken breasts (about pounds)
  • 1 (8oz) block cream cheese (softened)
  • 1/3 cup basil pesto
  • 1+ cups shredded mozzarella cheese
  • Fresh chopped tomatoes and basil for garnish (optional)

Instructions

  1. Preheat your oven to 375°F and grease a 9×13 baking dish.
  2. Combine the block of softened cream cheese with 1/3 cup of basil pesto in a small bowl.
  3. Place the chicken breasts into your greased dish and use a spoon to spread the cream cheese mixture evenly over the top of the chicken.
  4. Sprinkle a cup or more of shredded mozzarella over the top—feel free to add extra if you love cheese!
  5. Bake uncovered in the center rack of your oven for 30-45 minutes until the chicken is cooked through.
  6. Garnish with fresh chopped tomatoes and basil. Enjoy!

Notes
