Ingredients

  • 4 large leeks, cleaned and sliced
  • 4 medium potatoes, peeled and diced
  • 1 onion, chopped
  • 4 cups vegetable broth
  • 1 cup coconut milk or other dairy-free cream
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh chives for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onions and sliced leeks, and sauté until soft, about 5-7 minutes.
  2. Add the diced potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15-20 minutes.
  3. Use an immersion blender to puree the soup until smooth, or transfer to a blender in batches.
  4. Stir in the coconut milk and season with salt and pepper.
