- 4 large leeks, cleaned and sliced
- 4 medium potatoes, peeled and diced
- 1 onion, chopped
- 4 cups vegetable broth
- 1 cup coconut milk or other dairy-free cream
- 3 tablespoons olive oil
- Salt and pepper to taste
- Fresh chives for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onions and sliced leeks, and sauté until soft, about 5-7 minutes.
- Add the diced potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15-20 minutes.
- Use an immersion blender to puree the soup until smooth, or transfer to a blender in batches.
- Stir in the coconut milk and season with salt and pepper.
- Heat through, then serve hot, garnished with fresh chives.
