- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 pound sausage, crumbled
- 4 cups chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- 1 tablespoon olive oil
- Optional: chopped green onions or parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the crumbled sausage and cook until browned.
- Add the chopped onion and garlic, sauté until the onion is translucent.
- Stir in the diced potatoes and chicken broth, bringing to a boil.
- Reduce heat and simmer until the potatoes are tender, about 15 minutes.
- Stir in the heavy cream, season with salt and pepper.
- Serve hot, garnished with green onions or parsley if desired.
Notes
For a creamier texture, blend a portion of the chowder using an immersion blender. Store leftovers in an airtight container in the refrigerator for up to three days.
