Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 pound sausage, crumbled
  • 4 cups chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Optional: chopped green onions or parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the crumbled sausage and cook until browned.
  3. Add the chopped onion and garlic, sauté until the onion is translucent.
  4. Stir in the diced potatoes and chicken broth, bringing to a boil.
  5. Reduce heat and simmer until the potatoes are tender, about 15 minutes.
  6. Stir in the heavy cream, season with salt and pepper.
  7. Serve hot, garnished with green onions or parsley if desired.

Notes
