  • 1/2 teaspoon (3 ml) salt
  • 1 1/2 teaspoons (8 ml) Pumpkin Pie Spice OR:
  • 1 teaspoon (5 ml) ground cinnamon
  • 1/4 teaspoon (1 ml) ground ginger
  • 1/8 teaspoon (1 ml) ground cloves
  • 1/8 teaspoon (1 ml) freshly grated nutmeg
  • 2 cups (480 ml) chilled heavy cream
  • 2 cups (480 ml) strong coffee or espresso
  • 3 tablespoons (45 ml) non-alcoholic vanilla extract
  • 2 packages (200 g each) ladyfinger cookies (Savoiardi) – about 24 cookies
  • 3 tablespoons (45 ml) roasted and salted pumpkin seeds

Instructions

  1. In a large mixing bowl, blend the cream cheese, pumpkin puree, light brown sugar, 1/4 cup granulated sugar, salt, pumpkin pie spice, and heavy cream.
  2. Utilize an electric mixer to whip the mixture until medium-stiff peaks form. The peaks should gently fold over without dissolving back into the mixture. Avoid overmixing.
  3. In a separate small bowl, stir together the remaining teaspoon of granulated sugar and the strong coffee until the sugar is fully dissolved.
  4. Submerge the ladyfinger cookies briefly in the coffee mixture on both sides, then arrange them at the base of a 9-inch springform pan, breaking them as necessary to fit.
  5. Spread a quarter of the pumpkin mixture evenly over the ladyfingers.
  6. Continue layering with the remaining ladyfingers and pumpkin mixture to create three additional layers, finishing with the pumpkin mixture. You may have extra ladyfingers.
  7. Cover the dish and refrigerate for a minimum of 8 hours, preferably overnight.
  8. Once set, release the springform pan and carefully remove it.
  9. Garnish with roasted and salted pumpkin seeds, cut into portions, and serve.
