  • 1 cup heavy cream (can be omitted for lighter version)
  • Salt and pepper to taste
  • 1 cup extra-sharp cheddar cheese (shredded for best melting properties)
  • 1/2 cup sour cream (optional for garnish, can be omitted)
  • 1 loaf hearty buttered bread (for dipping)

Instructions

  1. Heat the olive oil and 1 tablespoon of butter in a large pot over medium heat. Add the Italian sausage and cook until browned, breaking it into smaller pieces.
  2. Stir in the mirepoix and minced garlic, cooking until fragrant and softened.
  3. Add the chopped baby gold potatoes and the stock; bring to a gentle simmer.
