Ingredients

- 1 lb sausage
- 4 potatoes, diced
- 1 onion, chopped
- 2 carrots, sliced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Optional: 1 cup shredded cheddar cheese
Instructions
- In a large pot or Crock Pot, brown the sausage over medium heat.
- Add the onion, carrots, and garlic, and sauté until softened.
- Stir in the diced potatoes and chicken broth, and bring to a boil.
- Reduce heat and let simmer until the potatoes are tender, about 15-20 minutes.
- Stir in the heavy cream and season with salt and pepper.
- If desired, stir in the cheddar cheese until melted.
- Serve warm.
Notes
For a thicker soup, mash a portion of the potatoes or adjust the amount of heavy cream. Garnish with cheddar cheese and fresh parsley.
