- 15 oz Italian sausage (crumbled)
- 8 oz rigatoni (uncooked)
- 1 cup chicken broth
- 1 cup heavy cream
- 4 cloves garlic (minced)
- 1 teaspoon Italian seasoning or Herbs de Provence
- 15 oz tomato sauce
- 5 oz fresh spinach
- Salt and coarsely ground black pepper
- Red pepper flakes (optional)
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the crumbled Italian sausage, cooking until browned and fully cooked. Stir occasionally to break apart any clumps.
- Add the minced garlic. Sauté for about 1 minute until fragrant. Then pour in the chicken broth and heavy cream, mixing well.
- Add the uncooked rigatoni to the skillet. Stir gently and bring the mixture to a simmer. Cover the skillet and allow it to cook until the rigatoni becomes al dente, usually around 10-12 minutes.
- After the rigatoni reaches that perfect al dente texture, fold in the fresh spinach. Let it wilt in the sauce for about 2-3 minutes.
- Once the spinach wilts, check the consistency of the sauce. If it’s too thick, add a little more chicken broth.
- Finally, season the dish with salt, coarsely ground black pepper, and red pepper flakes if desired. Stir, serve, and enjoy while hot.
Notes
To enhance flavor, consider sautéing the garlic until lightly golden before adding the cream.
