- 1 lb steak (sliced thin, use ribeye or sirloin for best flavor)
- 8 oz pasta (fettuccine or penne)
- 1 cup heavy cream (adds richness)
- 1/2 cup Parmesan cheese (grated, freshly grated for best flavor)
- 4 cloves garlic (minced)
- 2 tbsp olive oil (for sautéing)
- 2 cups baby spinach (adds color and nutrients)
- Salt (to taste)
- Black pepper (to taste)
Instructions
- Boil water in a large pot. Add a generous amount of salt once it starts boiling, then cook the pasta according to package instructions until al dente.
- While the pasta cooks, heat olive oil in a large skillet over medium-high heat.
- Add the sliced steak and season with salt and black pepper. Sauté until browned, about 2-3 minutes.
- Remove the steak from the skillet and set it aside, leaving the juices in the pan.
- In the same skillet, add garlic and sauté for about 30 seconds until fragrant.
- Pour in the heavy cream, stirring to combine with the juices.
- Add the grated Parmesan cheese, continually stirring until the cheese melts and the sauce thickens.
- Toss in the baby spinach and cook until wilted, about 1-2 minutes.
- Drain the pasta and combine it with the sauce, adding the steak back in.
- Stir until everything is evenly coated. Season with additional salt and black pepper to taste.
- Serve hot, garnished with extra Parmesan if desired.
Notes
For added flavor, marinate the steak before cooking. For a lighter version, substitute half and half for the heavy cream.
