Ingredients

  • 1 lb steak (sliced thin, use ribeye or sirloin for best flavor)
  • 8 oz pasta (fettuccine or penne)
  • 1 cup heavy cream (adds richness)
  • 1/2 cup Parmesan cheese (grated, freshly grated for best flavor)
  • 4 cloves garlic (minced)
  • 2 tbsp olive oil (for sautéing)
  • 2 cups baby spinach (adds color and nutrients)
  • Salt (to taste)
  • Black pepper (to taste)

Instructions

  1. Boil water in a large pot. Add a generous amount of salt once it starts boiling, then cook the pasta according to package instructions until al dente.
  2. While the pasta cooks, heat olive oil in a large skillet over medium-high heat.
  3. Add the sliced steak and season with salt and black pepper. Sauté until browned, about 2-3 minutes.
  4. Remove the steak from the skillet and set it aside, leaving the juices in the pan.
  5. In the same skillet, add garlic and sauté for about 30 seconds until fragrant.
  6. Pour in the heavy cream, stirring to combine with the juices.
  7. Add the grated Parmesan cheese, continually stirring until the cheese melts and the sauce thickens.
  8. Toss in the baby spinach and cook until wilted, about 1-2 minutes.
  9. Drain the pasta and combine it with the sauce, adding the steak back in.
  10. Stir until everything is evenly coated. Season with additional salt and black pepper to taste.
  11. Serve hot, garnished with extra Parmesan if desired.

Notes

For added flavor, marinate the steak before cooking. For a lighter version, substitute half and half for the heavy cream.
