- 8–10 oz ribeye, sirloin, or strip steak (room temperature, patted dry)
- Salt and black pepper, to taste
- 1 tablespoon olive oil
- 8 oz dried pasta (fettuccine, penne, or rigatoni)
- Salt (for pasta water)
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 1/4 teaspoon crushed red pepper flakes (optional)
- Fresh parsley or basil, chopped (for garnish)
- Extra Parmesan, for serving
Instructions
- Remove the steak from the fridge about 20-30 minutes before cooking. Pat it dry and season both sides with salt and black pepper.
- Bring a large pot of salted water to a boil. Add the pasta and cook to al dente according to the package instructions, usually around 8-10 minutes. Reserve 1/2 cup of pasta water, then drain the pasta.
- While the pasta cooks, heat the olive oil in a large skillet over medium-high heat. Sear the steak for 3-4 minutes on each side for medium-rare or adjust to your desired doneness.
- Transfer the steak to a cutting board and tent it with foil. Let it rest for at least 5 minutes before slicing thinly against the grain.
- Lower the skillet heat to medium. Melt the butter and add the minced garlic, sautéing for 30-60 seconds until fragrant.
- Pour in the heavy cream, scraping up any brown bits from the pan. Let it simmer for 2-3 minutes until slightly thickened.
- Stir in the freshly grated Parmesan and optional red pepper flakes. Taste and adjust the seasoning with salt and pepper. If the sauce is too thick, add reserved pasta water a few tablespoons at a time.
- Add the drained pasta to the skillet and toss to coat the pasta in the sauce. Fold in the sliced steak and any juices.
- Serve immediately, garnished with fresh parsley and extra Parmesan.
