Ingredients

  • 810 oz ribeye, sirloin, or strip steak (room temperature, patted dry)
  • Salt and black pepper, to taste
  • 1 tablespoon olive oil
  • 8 oz dried pasta (fettuccine, penne, or rigatoni)
  • Salt (for pasta water)
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Fresh parsley or basil, chopped (for garnish)
  • Extra Parmesan, for serving

Instructions

  1. Remove the steak from the fridge about 20-30 minutes before cooking. Pat it dry and season both sides with salt and black pepper.
  2. Bring a large pot of salted water to a boil. Add the pasta and cook to al dente according to the package instructions, usually around 8-10 minutes. Reserve 1/2 cup of pasta water, then drain the pasta.
  3. While the pasta cooks, heat the olive oil in a large skillet over medium-high heat. Sear the steak for 3-4 minutes on each side for medium-rare or adjust to your desired doneness.
  4. Transfer the steak to a cutting board and tent it with foil. Let it rest for at least 5 minutes before slicing thinly against the grain.
  5. Lower the skillet heat to medium. Melt the butter and add the minced garlic, sautéing for 30-60 seconds until fragrant.
  6. Pour in the heavy cream, scraping up any brown bits from the pan. Let it simmer for 2-3 minutes until slightly thickened.
  7. Stir in the freshly grated Parmesan and optional red pepper flakes. Taste and adjust the seasoning with salt and pepper. If the sauce is too thick, add reserved pasta water a few tablespoons at a time.
  8. Add the drained pasta to the skillet and toss to coat the pasta in the sauce. Fold in the sliced steak and any juices.
  9. Serve immediately, garnished with fresh parsley and extra Parmesan.
