Ingredients

- 2 cups carrots, chopped
- 2 cups potatoes, peeled and diced
- 1 onion, chopped
- 3 garlic cloves, minced
- 4 cups vegetable broth
- 1 can coconut milk
- 1 tsp cumin
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, sauté onions and garlic until translucent.
- Add chopped carrots and diced potatoes, cooking for five minutes.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat and simmer until vegetables are tender, about 20 minutes.
- Stir in the coconut milk and cumin.
- Blend the soup using an immersion blender until smooth.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
Notes
For a chunkier texture, reserve some cooked vegetables and add them back after blending. Experiment with spices for variations.
