- 4 large carrots, peeled and chopped
- 2 medium potatoes, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 can coconut milk
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Instructions
- In a large pot, sauté the chopped onion and garlic until translucent.
- Add the chopped carrots and diced potatoes, and sauté for a few minutes.
- Pour in the vegetable broth and bring to a boil.
- Reduce the heat and simmer until the vegetables are tender, about 20 minutes.
- Stir in the coconut milk and blend the soup until smooth with an immersion blender or in batches with a regular blender.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh herbs if desired.
Notes
For added depth, experiment with different herbs like thyme or parsley and consider leaving some vegetable pieces unblended for texture.
