A comforting creamy vegan soup made from carrots and potatoes, blended with coconut milk for a rich and satisfying dish.


Ingredients

  • 4 large carrots, peeled and chopped
  • 2 medium potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can coconut milk
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. In a large pot, sauté the chopped onion and garlic until translucent.
  2. Add the chopped carrots and diced potatoes, and sauté for a few minutes.
  3. Pour in the vegetable broth and bring to a boil.
  4. Reduce the heat and simmer until the vegetables are tender, about 20 minutes.
  5. Stir in the coconut milk and blend the soup until smooth with an immersion blender or in batches with a regular blender.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh herbs if desired.
