Ingredients

  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 4 cups mixed vegetables (broccoli, cauliflower, green beans)
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. In a large pot over medium heat, heat the olive oil. Add the chopped onion, diced carrots, and diced celery. Sauté until the vegetables soften, approximately 5-7 minutes.
  2. Stir in the minced garlic, cooking for an additional minute until fragrant.
  3. Pour in the vegetable broth and bring it to a boil. Add the mixed vegetables and simmer until all the vegetables are tender, about 10-15 minutes.
  4. Reduce the heat and stir in the heavy cream, blending the flavors beautifully. Season with salt and pepper to taste.
  5. For a creamy texture, use an immersion blender to blend the soup until smooth, if desired.
  6. Serve hot, garnished with fresh herbs if you choose.

Notes

For a variation, roast the mixed vegetables before adding them to the soup for enhanced sweetness.
