  • 2 teaspoons (10 ml) ground cumin
  • 1 teaspoon (5 ml) ground coriander
  • 1 teaspoon (5 ml) chili powder
  • 1/2 teaspoon (3 ml) smoked paprika
  • Salt, to taste
  • Black pepper, to taste
  • 2 cups beef broth (480 ml)
  • 2 cans white beans, drained and rinsed (15 ounces each can, about 425 g each)
  • 1 cup frozen corn (160 g)
  • 1/2 cup plain yogurt (120 ml)
  • 1/2 cup shredded mozzarella cheese (60 g)
  • 1 tablespoon lemon juice (15 ml)
  • 1/4 cup chopped fresh parsley (15 g)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and diced jalapeño, cooking for another 1-2 minutes.
  4. Add the chicken pieces to the pot and cook until no longer pink, about 5-7 minutes.
  5. Season the chicken with ground cumin, ground coriander, chili powder, smoked paprika, salt, and black pepper.
  6. Pour in the chicken broth and bring the mixture to a simmer.
  7. Add the drained and rinsed white beans and frozen corn to the pot.
  8. Simmer the chili for 15-20 minutes, allowing flavors to meld.
  9. Remove the pot from heat and stir in the sour cream until well combined.
  10. Mix in the shredded cheddar cheese until melted and creamy.
  11. Add the lime juice and stir to incorporate.
  12. Garnish with chopped fresh cilantro before serving.
