- 2 pounds baby potatoes, halved
- 4 slices bacon, chopped
- 1/4 cup honey
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the halved potatoes, chopped bacon, olive oil, honey, salt, and pepper.
- Toss everything until the potatoes are evenly coated.
- Spread the mixture on a baking sheet in a single layer.
- Bake for 25-30 minutes, or until the potatoes are tender and crispy, stirring halfway through.
- Once done, remove from the oven and garnish with fresh parsley before serving.
Notes
For an extra crispy finish, broil for a few minutes after baking. Store leftovers in an airtight container in the refrigerator for up to three days.
