- 4 large potatoes (Yukon Gold or Russet)
- 1 cup shredded cheese (your choice, such as cheddar)
- 1/2 cup cooked bacon, crumbled
- 2 tablespoons olive oil

Instructions
- Preheat your oven to 400°F (200°C).
- Wash the potatoes and slice them into thin rounds.
- In a large bowl, toss the potato slices with olive oil, salt, and pepper.
- Arrange the potato slices in a single layer on a baking sheet.
- Bake in the oven for about 20-25 minutes or until they are crispy and golden brown.
- Remove from the oven and sprinkle with shredded cheese and crumbled bacon.
- Return to the oven for another 5 minutes, or until the cheese is melted.
- Garnish with chives or green onions before serving.
Notes
For extra crunch, consider broiling the slices for the last minute. Use freshly shredded cheese for better melting.
