- 2 boneless, skinless chicken breasts
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 2 tablespoons olive oil
- 4 slices of bread
- Romaine lettuce, chopped
- Caesar dressing
- Additional Parmesan cheese for topping
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper.
- Dip each chicken breast in olive oil, then coat in the breadcrumb mixture.
- Place on a baking sheet and bake for 25-30 minutes until golden and cooked through.
- Toast the slices of bread.
- Assemble the sandwiches: on one slice of bread, place lettuce, the crispy chicken, and drizzle with Caesar dressing.
- Top with another slice of bread and sprinkle with more Parmesan cheese.
- Serve immediately.
Notes
Experiment with panko breadcrumbs for extra crunch. Let chicken rest for juicier results.
