Crispy Chinese egg rolls filled with a savory mix of cabbage, carrots, and optional protein, perfect for appetizers or snacks.


Ingredients

  • 1 package egg roll wrappers
  • 2 cups cabbage, shredded
  • 1 cup carrots, shredded
  • 1 cup cooked chicken or shrimp (optional)
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Soy sauce to taste
  • Vegetable oil for frying

Instructions

  1. In a large skillet, heat a little oil over medium heat. Add garlic and ginger, and sauté for 1 minute.
  2. Add cabbage, carrots, and green onions. Cook until vegetables are tender, stirring frequently. If using chicken or shrimp, add it now.
  3. Stir in soy sauce to taste. Remove from heat and let cool.
  4. Place a spoonful of the mixture in the center of an egg roll wrapper, fold the sides, and roll tightly.
  5. Heat oil in a frying pan over medium-high heat. Fry the egg rolls until golden brown and crispy on all sides.
  6. Drain on paper towels and serve hot with dipping sauce.
