Ingredients

- 1 package egg roll wrappers
- 2 cups cabbage, shredded
- 1 cup carrots, shredded
- 1 cup cooked chicken or shrimp (optional)
- 2 green onions, chopped
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- Soy sauce to taste
- Vegetable oil for frying
Instructions
- In a large skillet, heat a little oil over medium heat. Add garlic and ginger, and sauté for 1 minute.
- Add cabbage, carrots, and green onions. Cook until vegetables are tender, stirring frequently. If using chicken or shrimp, add it now.
- Stir in soy sauce to taste. Remove from heat and let cool.
- Place a spoonful of the mixture in the center of an egg roll wrapper, fold the sides, and roll tightly.
- Heat oil in a frying pan over medium-high heat. Fry the egg rolls until golden brown and crispy on all sides.
- Drain on paper towels and serve hot with dipping sauce.

Experiment with different fillings like mushrooms, bell peppers, or tofu for added flavor.
