- 8 Corn tortillas
- 1 cup Flour
- 1 cup Cornmeal
- 2 Eggs, beaten
- 2 tablespoons Lime juice
- 2 cups Cabbage, shredded
- 1 Avocado, sliced
- 1/4 cup Cilantro, chopped
- Salt, to taste
- Pepper, to taste
- Oil, for frying
Instructions
- Prepare the cod by seasoning fillets with salt and pepper.
- Set up a breading station with a plate of flour, a bowl of beaten eggs, and a plate of a mixture of cornmeal and flour.
- Dredge the fish in flour, dip in eggs, then coat in the cornmeal mixture.
- Heat oil in a skillet over medium-high heat and fry the fish until golden and crispy, about 3-4 minutes per side.
- Warm the corn tortillas in another skillet.
- Assemble the tacos by placing the fried fish on the tortillas, adding shredded cabbage, sliced avocado, and cilantro.
- Drizzle lime juice over the top and serve immediately.
