- 1 tsp smoked paprika
- Salt and pepper to taste

Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Scrub the potatoes—peel if desired—and cut them into ½-inch wedges. Soak the wedges in cold water for 10 minutes, then pat them completely dry.
- In a large bowl, toss the potatoes with olive oil or melted butter, garlic powder, smoked paprika, salt, and pepper until evenly coated.
- Arrange the wedges in a single layer on the baking sheet. Bake for 25 minutes undisturbed.
- Flip the potatoes and sprinkle them evenly with the Parmesan cheese. Bake for an additional 15-20 minutes until they become deeply golden and crispy.
- For extra crispiness, broil for 1-2 minutes, watching carefully to avoid burning.
- Garnish with fresh herbs and additional Parmesan if desired. Serve immediately.
